Book title notwithstanding, Gittleman makes clear in her introduction that salt is a necessary part of the human diet. It's the kind of salt and the amount we take in that concerns her--whether it comes from your saltshaker or your bathwater. Organized topically, her 501 "tips" run the gamut from low-salt recipes and the nutritional scoop on transfats and MSG to lessons in label reading. Her brand-specific suggestions will make shopping easier. Cooks, however, will have a harder time, as recipes are scattered through the text, with most chapters containing one or two. Having pen and paper at hand should neatly solve the problem as well as be of value for taking notes on the wealth of concisely delivered information Gittleman provides.
